Thanks to Nop and Matt for prompting me to do this. I've installed a new theme on the site which will offer "dark mode", ie light text on a dark background, as preferred by some users.
The new theme is called Repulse.
If you'd like to try it:
On the top left, you should see a little drop-down with your username and a little triangle. Click this and select "Look and Layout".
You'll see an option titled Current Theme. You'll see "SMF Default Theme - Curve2" listed - this is the current theme - and a CHANGE button next to it.
Click the CHANGE button and under "Repulse-v1.2.4", click "USE THIS THEME".
The new theme will take effect, probably in "light mode". So scroll down to Theme Mode and select "Dark Mode". Then click the "CHANGE PROFILE" button, bottom right of the page.
Job done!
You'll then get the forum in Repulse's "dark mode". The original theme doesn't have a dark mode.
Of course you can use the new theme in "light mode" as well if you wish.
I think the theme is pretty ergonomic and legible. On the right hand side to the right of the banner you'll see a row of coloured buttons:

.. and you can use these to change the text foreground colour.
This was actually pretty painless - I'll install more themes probably so there's a bit of choice.
Note that choosing the new theme only affects your personal view; you can change back at any time. Please do let me know if you have questions or encounter any difficulties.
The one thing I don't like about the new theme, albeit it's a niggle, is that it doesn't display the "Between The Wheels" name prominently. But I may fix that.
Other than that - tested on desktop and mobile browsers, seems to work nicely.

I've just noticed that there's a little "select theme mode" button on the top row in the Repulse theme - if you're in dark mode, it's the little crescent moon button:

Click that to select between light / dark mode quickly. It also offers "system mode" which is the same as dark mode (it just means whatever the default is set to, I think).
System mode is indicated by a little computer icon, light mode by a little sun.
Not just that, there are also little dots is colour allowing you to change colour on the spot.
Very handy switching between green and red with Christmas coming up.

Nice, I'm on the new theme but not the dark mode for me - makes my eyes go funny.
Tried the dark but went back to the default..

Me too. Just didn't get on with it.
The old theme won't go away, just to be clear. I'm not phasing in a replacement here. Might add some more themes in coming weeks.
All colour options have gone, I am looking at a purple site ;D
Edit: and now they're back..
No idea what happened there - haven't made any changes today so might have been a browser issue at your end.
